lol I guess several of you were intrigued by that recipe for potato salad, eh?
Well, here it is. :) If you eat it standing up, the calories don't count.
Several potatoes - probably 4-5 pounds, peeled and cut up (I've used cubed hash browns in a pinch)
1 dozen eggs
1pound of bacon, fried, drained, crumbled
Ranch Dressing (or bleu cheese - yum)
Boil potatoes, boil eggs - dice and combine
Add one or more green onion – the whole thing chopped
Then add a mixture of low fat Miracle Whip and low fat Ranch dressing - 2/3 ranch to 1/3 Miracle Whip to taste
Add mustard, one tablespoon at a time until you get the desired flavor.
Add one package of colby jack cheese. I like the cheese crumbles but whatever is in your fridge is fine.
Add Salt, pepper, lawrys to taste.
This is good when you make it. Even better the next day. :)
